Most Basque and Asturian ciders are poured from a great height, as is the traditional custom. This is done to introduce some carbonation, which tempers the strong acidity and brings out the fruit bouquet of the cider. The Basques pour from shoulder height, while the Asturians prefer more carbonation and pour dramatically from high overhead.

Only two fingers of cider are poured, known as Un Culín (a shot or gulp). This should be consumed deliberately before the carbonation escapes, and, of course, paired with a pintxo!
